I'm someone who will crave a dish specifically for the sauce or condiments that go with it. This sauce has that power, and you can put it on almost anything! I've enjoyed this on roasted and grilled veggies, tacos, nachos, loaded sweet potatoes and veggie bowls. It keeps in the refrigerator for several days, so make it at the beginning of the week and enjoy it with several meals.

Ingredients
1 medium serrano pepper
1 cup packed cilantro
1 cup baby spinach (loosely packed)
4 large cloves garlic
½ ripe avocado
1/2 tsp salt (plus more to taste)
Juice from 1 lime
1 Tbsp maple syrup
1 Tbsp olive oil
Water (about ¼ cup or more)
Instructions
Place all ingredients except water into a food processor and mix until smooth. Add water a couple tablespoons at a time to thin until you have a pourable sauce.
